1 Butternut Squash peeled/seeded and chopped into small bite size pieces – Bake in oven with 1 Tlbs. olive oil on cookie sheet at 375 degrees for 15-20 minutes – cool
Mix together:
1 can (15 oz.) drained and rinsed black beans
1 can (11 oz.) drained corn
2 roma tomatoes chopped
¼ c. red onion chopped
½ red bell pepper seeded and chopped
Add Cooled squash
Toss with:
¼ c. olive oil
½ tsp. cumin
1/2 tsp. chili pwd.
1 garlic clove pressed
salt and pepper to taste
¼ c. feta cheese
Chill for 2 hours before serving
This is also really good served the next day
